Recipe: makes 2 salad servings, plus extra dressing.
Ingredients for the Dressing:
1/2 cup of Original Yoggu!
Juice from 2 organic lemons
1 tbsp dijon mustard
1-2 tbsp Nutritional Yeast
splash of ACV
1 tsp fresh garlic
Pinch of sea salt + black pepper
Salad Ingredients:
6-7 large leaves of Organic Kale (rinsed thoroughly, and massaged using hands to aid in digestion)
Rip into small pieces with hands or knife.
Combine dressing into a high speed blender or food processor and pulse for 2-3 minutes to mix well. Feel free to adjust the taste to your preference! Once done, pour over kale, and add remaining dressing to a sealed container for storage in the fridge for up to 1 week. Massage dressing into the salad evenly.
Optional additions: Hemp Hearts, and Sunflower seeds. Top with more cracked pepper and lemon!
