1 can chickpeas
1 shallot
4 garlic cloves
1/2 red onion chopped
Olive oil (generous amount)
2 tbsp maple syrup
1/2 tsp cumin powder
1/2 tsp curry powder
1/2 tsp smoked paprika
pinch of salt
splash of apple cider vinegar
Tangy Yogurt Dressing:
2 tbsp Original Yoggu!
All purpose seasoning or dried oregano
Squeezed juice of 1/2 a lime
Add olive oil to a pan on medium-low heat. Sauté onion, garlic, shallot, and spices until soft and aromatic. Next, add in chickpeas, apple cider vinegar, maple syrup and more olive oil if pan becomes dry. Lower heat and let simmer for 15 min. or until chickpeas are soft.
Combine ingredients for yogurt and mix well. Dollop onto chickpeas and serve with fresh cucumbers and tomatoes!
